Overview

The Sous Chef reports to the Chef and is responsible for daily shift to shift kitchen operations. Areas of responsibility include staff development (cooking methods, recipe execution, ingredient knowledge, equipment operation), supervise cooks and other kitchen staff, team building, rule enforcement, staff problem resolution. The Sous Chef participates in inventory management and purchasing. Additionally, the Sous Chef is required to participate in planning and implementation of short, mid and long range projects to further the quality and delivery of food.

Job Specific Requirements

  • Attendance
    • Maintain specific scheduled hours
    • Work days, nights, weekends and holidays
    • Average work week is 50 hours
  • Uniform
    • Men and Women – Chef coat, pants and kitchen appropriate footwear
    • Maintain clean and pressed uniforms to present a clean and professional appearance when interacting with the guests
  • Human Resources
    • Supervise 4-10 people on a shift by shift basis
    • Act as an intermediary between the office staff and subordinates for routine human resource issues
  • Kitchen Operations
    • Work on the cooking line during service fulfilling guest orders
    • Understand the term mise en place and run the kitchen accordingly
    • Manage kitchen staff to maintain proper levels of raw and prepped food
    • Pass baton to next shift and other departments
    • Train, coach, counsel and discipline employees to cook and follow recipes
    • Acknowledge quality work in subordinates and discipline kitchen staff when policies and procedures are not followed
    • Delegate task and projects effectively by outlining task requirements and defining what acceptable results are
    • Collaborate with the Chef to develop work schedules and handle any attendance issues that arise during the course of work
    • Create daily specials and educate service staff
    • Work on off site catering functions
    • Keep kitchen environment clean, safe and organized
    • Keep abreast of current food trends and incorporate this research into daily specials and new menu items
    • Use appropriate balance of supervision and hands on work
    • Avoid legal challenges by conforming to California State employment regulations
    • Interface with guests at appropriate times to provide increasing levels of guest service
    • Assist the Chef to create and implement policies and procedures to improve systems
    • Interface with dining room management to move training and projects forward
    • Work with Chef to lower food cost and maximize revenue
    • Read and understand reports to get daily metrics of sales and costs and make adjustments accordingly
    • Understand and be able to perform all subordinate tasks
    • Understand the inter-job roles and dependencies of each job
    • Provide leadership and stability during difficult circumstances
  • Product Knowledge
    • Have a deep understanding of ingredients, cuisine and cooking techniques
    • Have a strong knowledge of wine, beer and spirits

Physical Requirements

  • Able to work on feet for extended periods of time.
  • Able to lift full cases of food products.

Academic/Professional Requirements

(education and experience are assessed cumulatively)

  • Education
    • High school diploma or higher
    • Culinary School is a plus
    • Communicate effectively in written and spoken form
  • Work History
    • 2-4 years of prior kitchen management experience
  • Computer/office skills
    • How to print/copy/fax/scan
    • Use of Microsoft Office

Compensation

Up to $40,000/year
Commensurate with education and experience
